OUR PROCESS
Baked goods come in all shapes and sizes, some fluffy and airy, others dense and chewy. This variation depends on the leavening agent used. Yeast, the classic leavening agent, consumes sugars in the dough and produces carbon dioxide gas. This gas gets trapped in the gluten network (formed by wheat proteins), causing the dough to rise and become light and airy. Baking powder and baking soda are chemical leaveners that react with liquids in the batter to produce carbon dioxide, resulting in a rise.
